The Fruit
Most brandy producers do not begin with their finest fruit. The economics of distillation – where large volumes of wine are required to yield modest quantities of spirit – make the use of premium grapes almost prohibitive. We chose to ignore this logic.
The grapes used to make XO come from our certified organic Clare Valley estate vineyards – the same fruit we use for our flagship Rieslings. Chosen for the purity of their fruit, and the precision of their flavour. Using them for distillation is either an act of madness, or an act of complete conviction. We prefer to think it is the latter.
The Distillation
We distilled in tiny batches using a copper pot still – the method long associated with the world’s finest spirits. Copper is not merely tradition; it actively shapes the spirit, allowing the aromatic character of the fruit to speak with clarity.
The Maturation
From the still, XO entered a period of maturation that few Australian spirits have experienced. Custom-made 50-litre barrels of Tronçais forest oak were commissioned specifically for this project. Their small size means a greater ratio of oak surface to spirit, accelerating the complexity, integration, and depth.
